Our Story
Hebert’s Meat Market was once a dream of Eunice Hebert. Since living in the country seemed so far away, her dream she thought would never become a reality. Eunice was a housewife and a mother of three small children whom she shared with her husband Clement who was a master at slaughtering cows and hogs. After losing their youngest daughter JoAnne to bone cancer, Eunice sat her husband down to talk about her dream of owning a small meat market.
Clement started slaughtering beef and pork. Quartering and slicing cuts, placing them in an ice chest, and driving these different cuts into town to deliver fresh cuts of meat. This was done daily allowing them to save enough money so that in 1959 they were able to build a small, one-room, slaughterhouse. Once the word spread of this fresh meat from Hebert’s, customers started rushing from the city to this small country store. As the business grew, Clement began making sausage, boudin, and cracklins, which customers loved, and still do to this very day.
Today is the third generation of Heberts to own and operate the Slaughterhouse which is currently owned by Albert Luquette, son-in-law to Eunice and Clement Hebert. Today we have over twelve employees. We are open seven days a week selling fresh meat, boudin, cracklins, and other specialty meats. We still slaughter fresh pork and beef Monday-Friday. Hebert’s Meat Market is a big asset to our community and to our state being that we are one of the last slaughterhouses in southern Louisiana. Thank you for your support.
This is a picture of our parents, Albert Luquette Jr. and Marjorie H. Luquette. They ran the Meat Market for many years after our grandparents (Clement and Eunice Hebert) retired. We miss them both dearly.
